We had this for dinner on friday night but yesterday was so busy I had no time to post!
I spotted the recipe for these Creamy Baked Chicken Taquitos on the beautiful blog of Sweet Pea's Kitchen.
Its a great recipe as its relatively simple in that you just use cooked shredded chicken (i used a bbq chicken) mixed through with cream cheese, ground cumin, salsa. lime juice, garlic, chilli powder, grated cheese and spring onions. Roll it up in some tortillas and bake. I served with a homemade guacamole and store bought salsa.
It was quite a tasty and easy dish but it wasn't a dish wowed us, that is comparing to some amazing (unhealthy) chicken enchiladas that my hubby cooks.
These look delicious! My husband loves all kinds of wraps, I am sure he would love these too. I'll have a peek at the link now :).
