Fairy Penguin Cookie Dough Brownies

I really love to bake and love to have any excuse to do so. I've baked brownies a few times but although they are always delicious I usually miss the mark in terms of texture. Well these brownies were very tasty and hard to resist but I still managed to cook them that little bit too long. Oh well, I need to practice!

This recipe you can find from one of my lovely fellow sydney bloggers Penguins and Parantheses. You should definitely check it out as her brownies look incredible.
I was immediately captivated by the recipe as it incorporates making your own sprinkles. That sure makes a delicious take on fairy bread. I made mine using beetroot powder as the colouring.
The recipe also includes the layer of cookie dough. I can't say I am a cookie dough addict (like some....) but the whole concept intrigues me and I really wanted to try it.

I made the sprinkles and cookie dough a day in advance as the sprinkles need to set. I thought I was being clever making the dough early too as it needs to rest but once it was quite firm and although lovely to roll out I couldn't mix my sprinkles in. So when it came to layering the brownie I decided to also layer my sprinkles (my very rustic piped-too-thick sprinkles!).
So it went a layer of brownie mix, sprinkles, cookie dough, sprinkles and more brownie.

It was delicious, and although my sprinkles seem to disappear in the baking process there was an occasional crunch as you ate. Next time I will try and master my oven and bake them less to get that lovely soft centre.
And I will have another go at the sprinkles, they will be perfect for my little ones birthday.
