Nigella's Vietnamese Pork Noodle Soup

This is another fantastic recipe from Nigella Kitchen - I found a link for the recipe here.
This soup was just perfect for a hot sydney summer day (40+ degrees C), it was so wholesome yet light and refreshing. Very simple to make and really nothing that unusual about it, although I have never had vietnamese soup before! Actually I am not a soup person at all so I was really surprised I liked this.



The pork was marinated briefly in soy sauce, lime juice, soy sauce and paprika (I was surprised to see paprika?). The noodles were the other stand out feature - ramen noodles, they were delicious. The liquid component was very light and yet tasty but not in an overpowering way. We used the most amazing free range pork from our local butcher - i always knew that would be great.
Overall this was delightful, very simple and quick to make.

  1. Looks delicious! I have a copy of kitchen, I must try this recipe. I love vietnamese soup :) Some time you've GOT to try some authentic beef noodle soup (pho), it'll rock your world!

  3. Paprika does seen unusal. Sometimes I think English/European recipes have difficulties getting the amazing South East Asian ingredients we take for granted here. I would probably substitute some chilli paste. It looks so yummy though, and just right for our summer heat.
