Chicken Cacciatore


The other day I saw this recipe for Chicken Cacciatore on the new blog Chateau E. There are no words but it looked so enticing and perfect for this cooling weather I just had to cook it. It is essentially a casserole, so an easy dish to cook that fills your house with a beautiful aroma. The chicken drumsticks are seared before removing from the pan. Onion is softened followed by garlic and capsicum and then some mushroom. Red wine is cooked off and then in goes passata, stock (i actually used beef), herbs (thyme, oregano, bay leave), brown sugar and balsamic. The chicken is returned to the pan and cooked in the oven for an hour. 


Once out of the oven the chicken is removed and sauce reduced. I used this time to cook some quinoa and steam some broccoli. Once your happy with the sauce return the chicken to the pan an stir through some olives. I also made a last minute decision to pull some wholemeal sour dough from the freezer and grill.
What a delicious meal, the chicken fell of the bone and the sauce was rich and flavoursome. The quinoa was perfect and the bread was a nice accompaniment.

    And the cacciatore looks delicious. I thought it was tomatoes that gave cacciatore the reddish colors - didnt realize that it was red wine!

  3. Hi Muppy. Thanks for participating. No, I haven't made it to whole grain breads yet. I keep wanting to skip ahead but I am trying to stay with the book. I actually like thick whole grain bread toasted really well.

    Chicken Cacciatore! I've never made this but it is such a classic! Delicious.
