I stuffed up yesterday, in fact I have had a pretty ordinary week all round! My pasta was a disaster, I had the dough completely wrong and it would not roll out. I tried to rescue it but couldn't and not having a enough time to make a new dough I ended up using some from the cupboard. I always laugh when I see that happen on the cooking shows as its never happened to me but now I understand their pain.
The recipe was from Cook and Feed, a blog that always posts lots of delicious and inspiring recipes. We bought some gorgeous smoked salmon at the Good Food and Wine Show and this recipe came to mind. It had an amazing colour and the smokey element was slightly different to other smoked salmon.
The spring onions are sliced and softened in butter before adding white wine and lemon juice and reducing this right down. In goes the blanched asparagus followed by dill, smoked salmon, cream cheese (about 150g, the original recipe calls for cream) and some pasta water. Once its all warm just mix through the pasta. So easy and so delicious.
I really enjoyed this dish, the flavours were rich but yet the salmon really came through. My husband thought there was a little too much dill but I really liked it. My daughter loved it.
