Last night I cooked another of the recipes from Good Chef Bad Chef. This time it was one of Gary Mehigan's recipes, Baked Mushrooms.
I was unable to find Manchego cheese so I used freshly grated parmesan instead, but I would really like to try this cheese at some stage.
This was a really simple dish yet delicious. It would make a great starter as I still felt quite hungry for the evening. There was nothing unusual just classic flavours put together to make a great dish - mushrooms (amazing ones bought at the markerts), prosciutto, bread, cheese, garlic and parsley.
The only problem I had was cooking the mushrooms - I ended up putting a dash of white wine in the bottom and covering with foil to help the mushies along. Next time I will cook the mushrooms first with the garlic butter before adding the prosciutto and bread.
Overall a yummy dish!
