Inspired by Not Quite Nigella's beautiful Linzer Heart Cupcakes I decided to embark on my own version!
First I made some passionfruit curd that Nigella Lawson recently posted on her site. It was really lovely, very creamy in texture. My passionfruit were on the sweet side so i could have added less sugar as i prefer a curd with a bit more tang!
Next I made some muffins (the same recipe i used for the lemon curd muffins - except no curd of course). These are a very soft moist muffin, I think the yoghurt is what gives it the nice texture.
For assembly I had refrigerated the curd and left the muffins to cool on the bench overnight.
In the morning I carefully cut the top off my muffins and then turned the top upside down (NQN's tip) to cut out a star shape. I chose the star shape as these are for my family we are going to visit :)
I then spooned a decent amount of curd on the muffin and added my star studded lid. Gorgeous! I was really pleased they worked so well.

ReplyDeleteOooh, delicious! I'll give it a try soon, just made apple and cinammon muffins today :) I love passionfruit WAY more than lemon curd.

ReplyDeleteThese are really beautiful. Passionfruit is difficult to find here, so I'd have to use another type of curd, but I'd really like to try to make something that resembles these. I hope you have a great day. Blessings...Mary
